MLK Day VISTA Project @ Campus Kitchens, St. Peter's University
The Campus Kitchen at St. Peter's University is largely student run and operates Monday through Friday, preparing and delivering meals to various shelters in Jersey City. Surplus wholesome food that would be thrown out from the university's dining halls, cafeterias, and local grocery stores is rescued through the work of the associate director of Campus Ministry, Erich Sekel, who supervises the program. It is then cooked and packaged by volunteers.
The Jersey City Americorps VISTA volunteers are deeply connected to the Serve Jersey City program, as our city is a member of the Cities of Service coalition and dedicated to working with residents to innovatively solving city problems through the expansion of volunteerism. Due to this, they aim to team up with a different local non-profit as holidays and national service days come around, thus fitting their mission of increasing local non-profit visibility. To honor Dr. Martin Luther King Jr. , a great warrior against poverty and social injustice, the JC VISTAs worked with Campus Kitchens on January 13 to celebrate Dr. King's legacy through service to provide meals for the food insecure of Jersey City.
